WHAT IS LIFESTYLE MEDICINE?

In September 2018 I read a book that changed my life.  How Not to Die opened my eyes to plant-based nutrition and the prevention and treatment of disease.  It was in the midst of reading this book that I committed to a whole-food, plant-based diet and the study of Lifestyle Medicine.  In this specialty, the treatment of disease is focused on the WHOLE person - what we eat, what we do, and how we interact with other people.  It focuses on a whole-food, plant-based diet, physical activity, sleep and stress-management as medical treatments.  Once I started to dig deep into these recommendations, I found a whole world of scientific information supporting their use.

I have now devoted much of my time to studying these principles.  My goals are to treat the underlying causes of disease in order to help people to get off of medications and live longer, healthier lives.

The Trifecta Fajita!

I seriously wish every night could be Mexican night. Peppers, onions, cumin, chili powder, CILANTRO. I just love it all. Last night I decided to tackle making my own fajitas and boy, did I knock it out of the park! I tried three new recipes and combined them to make these beautiful veggie fajitas on a sweet potato tortilla with guacamole.


OMG, they were good. I used this sheet pan fajita recipe, combined with this sweet potato flatbread/tortilla. But honestly, you don't need a recipe. Mix equal parts cooked sweet potato with equal parts whole wheat flour, roll out and toast on a nonstick pan. It's that easy! I've found several recipes that include cooked sweet potato so I've been keeping a few baked and ready to go in the fridge.

To complete the Trifecta Fajitas I topped them with this salsa mixed with 1/2 a mashed avocado to make a guacamole. (I will tell you though, I'm still looking for my favorite salsa recipe. If I make this again it will be with regular diced or crushed tomatoes and not the fire roasted ones.)

But I will tell you. These fajitas were AMAZING. AND, bonus, my kids ate the tortillas (small victories!). I will be making these again and again and again. I hope you try them and let me know what you think! Also, if you have a bangarang salsa recipe, please send it my way. The more cilantro, the better. ;)
